ASPARAGUS QUICHE
Prep Time: 1 Hour | Cook Time: 40 Minutes | Servings: 8
Ingredients
- Premade frozen pie crust of your choice
- 1 tsp extra virgin olive oil
- 1 onion thinly sliced
- 12oz 4Earth Farms Organic Asparagus
- 1 garlic clove, minced
- 1/2 cup grated Asiago cheese
- 4 large eggs
- 1 cup 2% milk
- 1 tablespoon Dijon mustard
- 1 tsp chopped fresh thyme
- 1/2 tsp kosher salt
- 1/8 tsp black pepper
Directions
- Pre-heat oven to 375º F
- Press premade dough into a 9-inch pie dish, cover with parchment and bake as directed
- While crust is baking, heat olive oil in a large skillet over medium heat. Add the onions and cook, stirring occasionally until translucent, about 5 minutes. Add Asparagus and cook until tender, about 5 more minutes. Stir in the garlic and cook for 1 minute. Remove from heat and slide the vegetables into the baked crust. Top with the grated cheese.
- In a large mixing bowl, whisk eggs, milk, Dijon mustard, herbs, salt and pepper. Pour the egg mixture into the crust. Stop 1/4” from the top.
- Bake the quiche for 30 minutes or until the edges
CAPRESE ROASTED ASPARAGUS
Prep Time: 10 Minutes | Cook Time: 20 Minutes | Servings: 4
Ingredients
1 lb. 4Earth Farms Organic Asparagus
2 tbsp Olive oil
Kosher salt and pepper to taste
2 cups shredded mozzarella cheese
- 2 cups cherry tomatoes, halved
- Fresh chopped basil
- Balsamic glaze
Directions
Preheat oven to 400 degrees. Line baking sheet with foil and spray with non-stick cooking spray or use a silicone liner.
Place the asparagus on one side of baking sheet and place the tomatoes on the other side.
Drizzle the top of the asparagus with olive oil, and season with salt and pepper. Repeat with tomatoes.
Place in the oven and cook for 5 minutes. Remove from oven and top the asparagus with the mozzarella. Place back in oven
and cook for another 5-10 minutes until cheese is melted and golden.
Remove from oven and place the asparagus on serving plate, top the asparagus with tomatoes and fresh basil. Drizzle with balsamic glaze and serve.
ASPARAGUS GRILLED ASPARAGUS
Prep Time: 10 Minutes | Cook Time: 10 Minutes | Servings: 4
Ingredients
- 2 tablespoons olive oil
- 1 tsp. balsamic vinegar
- Coarse Kosher Salt
- Black Pepper
- 1 small lemon
- 1 – 12oz Bag of 4Earth Asparagus Spears
Alternative toppings:
- Brown butter and almonds
- Goat cheese and toasted pine nuts
- Feta cheese, sun-dried tomatoes and kalamata olives
- Sprinkle with diced roasted garlic
Directions
- Pre-heat grill to medium heat
- In a small bowl, blend together olive oil and balsamic vinegar
- Layout asparagus spears and brush on the olive oil mixture until evenly coated
- Salt and pepper spears
- Using tongs, lay asparagus on grill perpendicular to the bars so they don’t fall through
- Turn regularly and grill for 6-10 minutes until tender.
- Remove from grill and plate
- Finish with squeezing the juice of one lemon
