Asparagus Quiche with its name on the banner at the top

ASPARAGUS QUICHE

 Prep Time: 1 Hour | Cook Time: 40 Minutes | Servings: 8

Ingredients

  •  Premade frozen pie crust of your choice
  • 1 tsp extra virgin olive oil
  • 1 onion thinly sliced
  • 12oz 4Earth Farms Organic Asparagus
  • 1 garlic clove, minced
  • 1/2 cup grated Asiago cheese 
  •  4 large eggs
  • 1 cup 2% milk
  • 1 tablespoon Dijon mustard
  • 1 tsp chopped fresh thyme
  • 1/2 tsp kosher salt
  • 1/8 tsp black pepper

Directions

  1. Pre-heat oven to 375º F
  2. Press premade dough into a 9-inch pie dish, cover with parchment and bake as directed
  3. While crust is baking, heat olive oil in a large skillet over medium heat. Add the onions and cook, stirring occasionally until translucent, about 5 minutes. Add Asparagus and cook until tender, about 5 more minutes. Stir in the garlic and cook for 1 minute. Remove from heat and slide the vegetables into the baked crust. Top with the grated cheese.
  4. In a large mixing bowl, whisk eggs, milk, Dijon mustard, herbs, salt and pepper. Pour the egg mixture into the crust. Stop 1/4” from the top.
  5. Bake the quiche for 30 minutes or until the edges

ASPARAGUS GRILLED ASPARAGUS

 Prep Time: 10 Minutes | Cook Time: 10 Minutes | Servings: 4

Ingredients

  •  2 tablespoons olive oil
  • 1 tsp. balsamic vinegar
  • Coarse Kosher Salt 
  • Black Pepper
  • 1 small lemon
  • 1 – 12oz Bag of 4Earth Asparagus Spears

 Alternative toppings: 

  • Brown butter and almonds
  • Goat cheese and toasted pine nuts
  • Feta cheese, sun-dried tomatoes and kalamata olives
  • Sprinkle with diced roasted garlic

Directions

  1.  Pre-heat grill to medium heat
  2. In a small bowl, blend together olive oil and balsamic vinegar
  3. Layout asparagus spears and brush on the olive oil mixture until evenly coated
  4. Salt and pepper spears
  5. Using tongs, lay asparagus on grill perpendicular to the bars so they don’t fall through
  6. Turn regularly and grill for 6-10 minutes until tender.
  7. Remove from grill and plate
  8. Finish with squeezing the juice of one lemon
