Cheesy Stuffed Organic Jalapeños with Bacon

Ingredients

  •  12 fresh 4Earth Organic Jalapeño Peppers
  • 8 ounces of full-fat brick cream cheese, softened to room temperature
  • 1/2 cup grated Parmesan cheese 
  • 1 cup shredded cheddar cheese
  • 1 clove garlic, chopped
  • 1/2 teaspoon smoked paprika
  • 12 slices bacon, cut in half

Directions

  1. Preheat the oven to 400ºF. Line a baking sheet with parchment paper or silicone baking mat and set aside.
  2. Cut the Jalapeño Peppers in half lengthwise; remove seeds and center membrane, set aside.
  3. Using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese, cheddar cheese, garlic, and paprika together until combined. 
  4. Spoon fill each of Jalapeño halves with the mixture. 
  5. Place a piece of the bacon on the prepared Jalapeño and secure with toothpick. Place each on the baking sheet and bake for 25-28 minutes until the bacon is cooked
